Mini Meatloaf

This is a recipe I've had for so long I forget where I originally found it but it's a great, quick dinner that works really well for just making dinner for the two of us. Next time you want a new twist on a tired dinner, bake your favorite meatloaf recipe in muffin pans. It gives you a faster cook time and personal sized portions. I also like to add interesting flavors and top with cheese for a different twist.
There are a slew of meatloaf recipes at Allrecipes so pick one that sounds good and give it a go!
Other variations of meatloaf I've tried have been:
Fiesta meatloaf, add a little salsa to the mix and top with cheese and more salsa.
BBQ meatloaf, barbecue sauce instead of catchup.
Greek meatloaf, season with greek salad dressing and top with feta cheese.
Flavor with any dry soup packet like french onion or vegetable.
I also like to saute onions, garlic, celery, tomatoes, or other small vegetables and add them to the mixture. Split the meat in half and try two kinds, since they're individual size you could even get the kids involved and have them each add their own favorite flavors. I know meatloaf tends to get a bad rap, but it can be such a versatile dinner if you're willing to think outside the box a bit!
